My anxiety due to the crazy busy week.. no bueno.
I keep missing the UPS guy or Fedex guy or what not. meaning I come home to their little note on the door and i have to sign so they will leave it the next day! 
am i the only one that thinks american idol has run its course and needs to just give up? you made it 11 seasons. congrats. now stop.


Wonderful

Left my house late to school and I made every single traffic light. annnddd a girl missed a close parking spot and therefore i got it. I had time to bring snacks to the boy and still make it to class on time. oh yea. 
my week is almost over and i have a chill weekend ahead of me. 
finding a tea that may help my tummy issues.
my shows came back this week!! 
boyfriend putting up with my crazy this week. love you babe.

Sweet Potato Soup with Healthy Biscuits


First off. I have had a crazy week and I'm so glad its almost over. Second. Make sure you sign the petition against SOPA and PIPA antipiracy act that they are trying to pass. Sign here.

Ok  now moving on to more important matters like this INCREDIBLE soup. I have made a couple of the recipes off of Tadka Pasta's blog and I haven't made something I didn't like. This soup did take more time than i would have liked for a weekday however it was worth it. Next time i would get the potato and bell peppers roasted and pureed ahead of time. (takes 45 mins) Also, I wanted it a little more creamy so I added about a tablespoon of heavy cream that I had on hand. 

Healthy Biscuits. yep I said it. These were easy to make and so good. I made them with gluten free AP baking flour and it worked just fine. However you have to watch them very closely if using GF flour. I have found that it cooks much faster than regular flour. These only took 5 min to cook rather than 15. They turned out so well! I cut down the butter to 2 tablespoons and it was perfect. The addition of yogurt instead of eggs or milk was brilliant. You couldn't tell a difference and it made these much healthier. I was very pleased.

Bagel sandwich

Ok, so as some of you know, i have celiac disease and therefore can't eat gluten. So im on a quest to find gluten free food items that are tasty. Well i went on a bagel adventure. I found these bagels at the store and decided to give them a shot. well...they weren't the best. So. i toasted them. better. put butter on each side and made a grilled cheese type of sandwich. EPIC. 
Apparently you add fat to anything and its amazing. go figure.

i used chive and onion cream cheese, tomato and butter to grill it. 
not a low fat meal

Wacky and Wonderful Wednesday




Wacky

Classes started back
books haven't gotten to my house yet.
had a bleh morning, just realized i needed sleep
gluten in my toaster. made me sick.
I am about 10 semesters behind in physiology due to the fact i haven't had biology in 8 years.
physiology lab is on a computer...on the internet...simulated....
being hungry all the time
having to get used to waking up at 5:30 to workout. not very fun.

my amazing boyfriend. I'm so incredibly lucky to have him (mashala mashala) He really is an incredible man and I am so proud of him.

Banana Bread Muffins


Well this is the last weekend of Christmas break. I'm glad to have something to do again but at the same time....i kinda liked resting. But anyway, I wanted to make something to bring to school tomorrow. ( I tend to bake the science department food...all the time) So. this is what came of it. The only thing I did was add 1/4cup of mini semisweet chocolate chips. Turned out to be a delicious change. So here is the recipe!

Zucchini cakes



these were incredible. I have tried countless zucchini cake recipes and none of them were very good. They all had pretty much the same ingredients. than i found this one. Oh My! it was so good. the only adjustment i had to make was to use 2 eggs instead of one. i think that is because of my gluten free panko though. Recipe!

So i got tired of eating the same breakfast over and over so i decided to make something different. It was good but not as good as i had hoped. i didn't have enough strawberries so i replaced half of them with frozen berries that i thawed. Here is the recipe if you want to try it!



Healthy rice pudding

So i came across this recipe on pinterest and really wanted to try it. Its healthier than regular rice pudding and also looked really easy. i was really drawn to the fact that you didn't have to stand at the stove for hours stirring and stirring and stirring and waiting. So the recipe says to put everything together and put in the oven....well i have to admit that i don't like soy milk so much, so i used vanilla almond milk instead. so maybe thats what did it. But after i left it in the oven for the allotted time it was super liquidy still. so i sat it on the counter to gelatinize. well nothing happened. So i put it in a pot and proceeded to stir. after a while of stirring it finally gelatinized. So.  next time i will skip the oven all together and just use the stove.

being able to spend this week with the boy. it has been amazing.
boyfriend being able to calm me down when i was freaking out about an iv. (hurts much less in your arm. never get it in your hand)
Gallbladder is working properly! woop!! i should not be excited about that...but i am
boyfriends dad came home today!
a weekend of relaxation.
hopefully finding out whats wrong with my insides.
